# Canelazo

Ecuadorian cane aguardiente fortifies a hot infusion of panela and cinnamon in this direct, warming highland tradition.

Strength: 10% ABV before dilution

## Ingredients

- 120 ml [Water](https://stirred.fyi/ingredients/water.md)
- 4 teaspoons [Panela](https://stirred.fyi/ingredients/panela.md) — Use finely grated panela so it dissolves evenly.
- 1 piece [Cinnamon stick](https://stirred.fyi/ingredients/cinnamon-stick.md) — Use one small stick and remove it before service.
- 45 ml [Ecuadorian cane aguardiente](https://stirred.fyi/ingredients/ecuadorian-cane-aguardiente.md)

## Method

1. Cover and gently simmer the water, panela, and cinnamon for 15 minutes.
2. Remove the cinnamon and take the pan off the heat before stirring in the aguardiente.
3. Pour immediately into a preheated Irish coffee glass.
