# Green Fairy

Absinthe leads lemon, rich syrup, aromatic bitters, and egg white in Dick Bradsell’s poised, foaming 1990s London sour.

Strength: 14% ABV before dilution

## Ingredients

- 25 ml [Absinthe](https://stirred.fyi/ingredients/absinthe.md)
- 25 ml [Fresh lemon juice](https://stirred.fyi/ingredients/fresh-lemon-juice.md)
- 25 ml [Water](https://stirred.fyi/ingredients/water.md) — Use chilled still water.
- 20 ml [Rich simple syrup](https://stirred.fyi/ingredients/rich-simple-syrup.md) — Use a two-to-one syrup by weight.
- 1 dash [Angostura bitters](https://stirred.fyi/ingredients/angostura-bitters.md)
- 15 ml [Egg white](https://stirred.fyi/ingredients/egg-white.md) — Use pasteurised egg white.

## Garnish

- Lemon twist — Express the peel oils over the drink and retain the twist.

## Method

1. Shake all ingredients hard with cubed ice until thoroughly chilled and aerated.
2. Strain back into the empty shaker and dry-shake without ice to build a dense foam.
3. Fine-strain into a chilled coupe.
