# Horse’s Neck

Cognac and ginger ale become unusually aromatic beneath a continuous lemon spiral, whose peel oils give the spare, cold highball its defining dry edge.

Strength: 10% ABV before dilution

## Ingredients

- 40 ml [Cognac](https://stirred.fyi/ingredients/cognac.md)
- 120 ml [Ginger ale](https://stirred.fyi/ingredients/ginger-ale.md) — Use a cold, crisp ginger ale with restrained sweetness.

## Garnish

- Lemon spiral — Use the rind of one lemon cut into a single long strip.

## Method

1. Cut one long, continuous strip of lemon peel and coil it inside a chilled highball glass with one end hanging over the rim.
2. Fill the glass with cubed ice, then add the Cognac and chilled ginger ale.
3. Stir once gently without disturbing the lemon spiral.
