# Pearl Diver

Donn Beach’s chilled honey-butter emulsion gives light and Demerara rums an almost weightless silkiness beneath orange, lime, spice, and crushed ice.

Strength: 23% ABV before dilution

## Ingredients

- 45 ml [Column-still aged rum](https://stirred.fyi/ingredients/column-still-aged-rum.md) — Use a light gold Puerto Rican-style rum.
- 15 ml [Demerara rum](https://stirred.fyi/ingredients/demerara-rum.md)
- 15 ml [Fresh lime juice](https://stirred.fyi/ingredients/fresh-lime-juice.md)
- 15 ml [Fresh orange juice](https://stirred.fyi/ingredients/fresh-orange-juice.md)
- 15 ml [Don’s gardenia mix](https://stirred.fyi/ingredients/dons-gardenia-mix.md) — Beat 30 ml honey with 30 ml softened unsalted butter until smooth, then beat in 5 ml cinnamon syrup, 2.5 ml vanilla syrup, and 2.5 ml allspice dram. Makes about 70 ml. Contains milk; refrigerate and use within one week.

## Garnish

- Pineapple leaf — Use one clean upright pineapple leaf.

## Method

1. Blend all the ingredients with 120 ml crushed ice for 20 seconds.
2. Fine-strain into a chilled Pearl Diver glass, pressing gently on the solids, then discard them.
3. Fill with fresh crushed ice.
