# Pisco Sour

An aromatic grape-spirit sour balancing lemon and sugar beneath a silky egg-white foam seasoned with bitters.

Strength: 17% ABV before dilution

## Ingredients

- 60 ml [Pisco](https://stirred.fyi/ingredients/pisco.md)
- 30 ml [Fresh lemon juice](https://stirred.fyi/ingredients/fresh-lemon-juice.md)
- 20 ml [Simple syrup](https://stirred.fyi/ingredients/simple-syrup.md)
- 30 ml [Egg white](https://stirred.fyi/ingredients/egg-white.md)
- 3 drops [Angostura bitters](https://stirred.fyi/ingredients/angostura-bitters.md) — Float on the foam.

## Method

1. Shake the pisco, lemon juice, syrup, and egg white without ice to build a fine foam.
2. Add ice and shake again until well chilled, then fine-strain into a chilled goblet glass.
3. Dot the bitters across the foam.
