# Sidra Ponche

Brandy and fino anchor a tart, nutty punch whose short crown of naturally funky Spanish cider adds orchard fruit and a quiet sparkle.

Strength: 14% ABV before dilution

## Ingredients

- 30 ml [Brandy](https://stirred.fyi/ingredients/brandy.md)
- 30 ml [Fino sherry](https://stirred.fyi/ingredients/fino-sherry.md) — Keep the opened bottle refrigerated and use it fresh.
- 15 ml [Fresh lemon juice](https://stirred.fyi/ingredients/fresh-lemon-juice.md)
- 15 ml [Demerara syrup](https://stirred.fyi/ingredients/demerara-syrup.md) — Use a rich syrup made with two parts demerara sugar to one part water.
- 45 ml [Spanish natural cider](https://stirred.fyi/ingredients/spanish-natural-cider.md) — Use cold, freshly opened dry natural cider.

- Lemon twist — Express the peel oils over the drink and retain the twist.

## Method

1. Shake every ingredient except the cider with cubed ice until thoroughly chilled.
2. Double-strain into a chilled highball, add the cider, then fill with fresh cubed ice and stir once gently.
