# Steve’s Rum Barrel

Steve Crane’s huge Kon-Tiki barrel balances two full measures of rum against four fresh juices, passion fruit, honey, and precise traces of almond and anise.

- 22.5 ml [Fresh lime juice](https://stirred.fyi/ingredients/fresh-lime-juice.md)
- 22.5 ml [Fresh orange juice](https://stirred.fyi/ingredients/fresh-orange-juice.md)
- 22.5 ml [Fresh grapefruit juice](https://stirred.fyi/ingredients/fresh-grapefruit-juice.md) — Use white grapefruit when available.
- 22.5 ml [Fresh pineapple juice](https://stirred.fyi/ingredients/fresh-pineapple-juice.md)
- 15 ml [Passion-fruit syrup](https://stirred.fyi/ingredients/passion-fruit-syrup.md)
- 15 ml [Honey syrup](https://stirred.fyi/ingredients/honey-syrup.md) — Mix equal parts honey and warm water; refrigerate and use within two weeks.
- 1 dash [Angostura bitters](https://stirred.fyi/ingredients/angostura-bitters.md)
- 6 drops [Anise spirit](https://stirred.fyi/ingredients/anise-spirit.md) — Use a dry anise spirit.
- 3 drops [Almond extract](https://stirred.fyi/ingredients/almond-extract.md) — Formulations differ; check the selected product label for tree-nut allergens.

## Garnish

- Orange spiral — Cut one continuous strip of orange peel and drape it inside the mug with one end over the rim.

## Method

1. Add all the ingredients to a spindle blender with 120 ml crushed ice.
2. Flash-blend at high speed for five seconds, then open-pour into a chilled rum barrel mug.
3. Add cubed ice to fill.
