# Treacle

Dark Jamaican rum, bitters, and a small float of clear apple juice produce the deep caramelised-fruit impression that gives this London Old Fashioned its name.

## Ingredients

- 50 ml [Jamaican rum](https://stirred.fyi/ingredients/jamaican-rum.md) — Use a dark, full-bodied aged Jamaican pot-still rum.
- 5 ml [Rich simple syrup](https://stirred.fyi/ingredients/rich-simple-syrup.md)
- 2 dashes [Angostura bitters](https://stirred.fyi/ingredients/angostura-bitters.md)
- 20 ml [Clear apple juice](https://stirred.fyi/ingredients/clear-apple-juice.md) — Use inexpensive filtered juice from concentrate, not cloudy pressed juice.

## Garnish

- Lemon twist — Express the peel oils over the drink and insert the twist.

## Method

1. Add the rich simple syrup and bitters to a chilled rocks glass with one ice cube, then stir.
2. Add half the rum and two more ice cubes, then stir until cold.
3. Add the remaining rum and more cubed ice, then stir again.
4. Fill the glass with cubed ice and float the clear apple juice over the surface without stirring it through.
