Vodka, muddled lime, raw honey, and demerara sugar form this contemporary Carnivore-style Kenyan serve around its retained honey-coated dawa stick.

  • Dawa stick Coat the grooves with the measured honey and retain it for continued stirring.

Ingredients

  • Lime 0.5 piece Core half a ripe lime and cut it into six chunks.
  • Vodka 60 ml
  • Honey 1 bar spoon Use raw honey and reserve enough to coat the dawa stick.
  • Demerara syrup 10 ml Use a two-to-one syrup by weight.

Preparation

  1. Muddle the lime chunks in a chilled double old fashioned glass just firmly enough to release their juice and peel oils.
  2. Add the vodka and any honey not used on the stick, then stir until the honey dissolves.
  3. Add the demerara syrup, pack the glass with crushed ice, and churn until cold.
