Troy Sidle’s room-temperature Manhattan-scaffa measures its own dilution, saturates bourbon with Cynar and bitters, and turns a whiskey rinse into ritual.

Ingredients
- Bourbon 52.5 ml Reserve 7.5 ml to coat the glass; use a well-aged bourbon for the rinse.
- Sweet vermouth 22.5 ml Keep the opened bottle refrigerated and use it fresh.
- Cynar 22.5 ml
- Angostura bitters 17 drops
- Water 15 ml
Preparation
- Coat the inside of a room-temperature rocks glass with the reserved 7.5 ml bourbon, then discard any excess.
- Combine the remaining 45 ml bourbon with the vermouth, Cynar, bitters, and water without ice, then express a broad orange peel over the mixture.
- Pour into the prepared glass at room temperature.
