Contrasting rum styles carry lime, honey, demerara, allspice, anise, bitters, and nutmeg through Martin Cate and Ron Roumas’s dark modern swizzle.

- Mint sprig Use a tall, fresh mint sprig.
Ingredients
- Column-still aged rum 30 ml
- Black blended overproof rum 30 ml
- Fresh lime juice 15 ml
- Demerara syrup 15 ml Use a rich syrup made with two parts demerara sugar to one part water.
- Honey syrup 15 ml Mix equal parts honey and warm water; refrigerate and use within two weeks.
- Allspice dram 7.5 ml
- Angostura bitters 3 drops
- Anise spirit 3 drops Use a dry anise spirit.
- Nutmeg 1 pinch Use a small pinch of freshly grated nutmeg.
Preparation
- Add all the ingredients to a chilled Collins glass and fill it three-quarters with crushed ice.
- Swizzle until the outside of the glass frosts, then top with more crushed ice.
