Cynar and rum absorb lime, rich demerara, bitters, and muddled mint in a stirred drink whose fresh ingredients behave nothing like a conventional sour.

- Mint sprig Clap the mint gently before placing it in the drink.
Ingredients
- White rum 30 ml Use a clean, neutral white rum.
- Cynar 30 ml
- Green Chartreuse 7.5 ml
- Fresh lime juice 3.75 ml
- Demerara syrup 3.75 ml Use a rich syrup made with two parts demerara sugar to one part water.
- Angostura bitters 2 dashes
- Mint 2 sprigs Use two fresh sprigs inside the drink.
Preparation
- Add all ingredients to a mixing glass, gently muddle the mint, and leave it to steep for 30 seconds.
- Add cubed ice and stir until thoroughly chilled and diluted.
- Strain into a chilled rocks glass over one large clear cube.
