Dunlop Cocktail
A Savoy-era union of mellow aged rum and dry, nutty amontillado needs only one dash of bitters to become a complete after-dinner cocktail.

Ingredients
- Column-still aged rum 60 ml Use a light gold Cuban- or Puerto Rican-style rum.
- Amontillado sherry 30 ml Keep the opened bottle refrigerated and use it fresh.
- Angostura bitters 1 dash
Preparation
- Stir all the ingredients with cubed ice until thoroughly chilled and diluted.
- Fine-strain into a chilled cocktail glass.
