Yale Cocktail
Old Tom gin, two bitters, lemon oil, and a small soda charge preserve the original 1895 Yale as a brisk pre-Martini cocktail rather than a later blue namesake.

Ingredients
- Old Tom gin 60 ml
- Orange bitters 3 dashes
- Peychaud’s bitters 1 dash
- Lemon 1 piece Cut one broad strip of peel with as little white pith as possible.
- Soda water 15 ml Use cold, freshly opened soda water.
Preparation
- Stir the gin, both bitters, and lemon peel with cubed ice until thoroughly chilled and diluted.
- Strain into a chilled cocktail glass, leaving the peel behind, and add the soda water.
