Lightly aged rum, lime, and concentrated honey form a bright Cuban sour before Champagne turns it into a long, sparkling drink over ice.

- Mint sprig Use a small fresh mint tip.
Ingredients
- Aged rum 45 ml Use a lightly aged Cuban-style molasses-column rum, one to three years old.
- Fresh lime juice 15 ml
- Honey syrup 15 ml Use a concentrated syrup made with three parts honey to one part water by weight.
- Champagne 50 ml Use thoroughly chilled Brut Champagne.
Preparation
- Shake the rum, fresh lime juice, and honey syrup with cubed ice until thoroughly chilled.
- Fine-strain into a chilled highball glass filled with fresh cubed ice.
- Top with the Champagne and lift once gently from bottom to top with a bar spoon.
