Air Mail

Lightly aged rum, lime, and concentrated honey form a bright Cuban sour before Champagne turns it into a long, sparkling drink over ice.

  • Mint sprig Use a small fresh mint tip.

Ingredients

  • Aged rum 45 ml Use a lightly aged Cuban-style molasses-column rum, one to three years old.
  • Fresh lime juice 15 ml
  • Honey syrup 15 ml Use a concentrated syrup made with three parts honey to one part water by weight.
  • Champagne 50 ml Use thoroughly chilled Brut Champagne.

Preparation

  1. Shake the rum, fresh lime juice, and honey syrup with cubed ice until thoroughly chilled.
  2. Fine-strain into a chilled highball glass filled with fresh cubed ice.
  3. Top with the Champagne and lift once gently from bottom to top with a bar spoon.
