Champagne Julep
Cold Champagne, mint, and one sugar cube make a light nineteenth-century julep over fine ice, finished with fresh fruit rather than another spirit.

- Orange slice Use one thin half-wheel.
- Strawberry half Use two small halves.

Preparation
- Dissolve the sugar cube in the water in a chilled Collins glass.
- Add the mint stems-down and fill the glass almost completely with finely crushed ice.
- Pour the Champagne slowly while stirring very gently, then serve with a short straw.
