Champagne Julep

Cold Champagne, mint, and one sugar cube make a light nineteenth-century julep over fine ice, finished with fresh fruit rather than another spirit.

  • Mint sprig
  • Orange slice Use one thin half-wheel.
  • Strawberry half Use two small halves.

Ingredients

  • Sugar 1 cube
  • Water 5 ml
  • Mint 2 sprigs Use tender fresh sprigs; keep the stems down and do not pulverize the leaves.
  • Champagne 120 ml Use thoroughly chilled Brut Champagne.

Preparation

  1. Dissolve the sugar cube in the water in a chilled Collins glass.
  2. Add the mint stems-down and fill the glass almost completely with finely crushed ice.
  3. Pour the Champagne slowly while stirring very gently, then serve with a short straw.
