Madeira Cobbler

Medium-dry Madeira, orange, and a teaspoon of sugar make the earliest named cobbler branch a cold, gently oxidative counterpart to the brighter Sherry Cobbler.

Ingredients

  • Madeira 90 ml Use a medium-dry Rainwater Madeira; with sweeter Bual or Malmsey, reduce or omit the sugar.
  • Superfine sugar 1 teaspoon
  • Orange 2 slices Use two thin half-wheels.

Preparation

  1. Shake the Madeira, sugar, and orange with cubed ice until thoroughly chilled and the sugar has dissolved.
  2. Strain into a chilled julep cup packed with crushed ice, crown with more crushed ice, and serve with a straw.
