Gin and bonded apple brandy give this pink classic real force beneath tart lime, pomegranate, and a fine egg-white foam.

Ingredients
- London dry gin 30 ml
- Bottled-in-bond apple brandy 30 ml
- Fresh lime juice 15 ml
- Grenadine 10 ml Use a grenadine made with real pomegranate.
- Egg white 10 ml Contains egg; use pasteurised egg white, keep refrigerated, and use promptly.
Preparation
- Dry-shake all the ingredients without ice to emulsify the egg white.
- Add cubed ice and shake again until thoroughly chilled.
- Fine-strain into a chilled cocktail glass.
