Treacle
Dark Jamaican rum, bitters, and a small float of clear apple juice produce the deep caramelised-fruit impression that gives this London Old Fashioned its name.

Ingredients
- Jamaican rum 50 ml Use a dark, full-bodied aged Jamaican pot-still rum.
- Rich simple syrup 5 ml
- Angostura bitters 2 dashes
- Clear apple juice 20 ml Use inexpensive filtered juice from concentrate, not cloudy pressed juice.
Preparation
- Add the rich simple syrup and bitters to a chilled rocks glass with one ice cube, then stir.
- Add half the rum and two more ice cubes, then stir until cold.
- Add the remaining rum and more cubed ice, then stir again.
- Fill the glass with cubed ice and float the clear apple juice over the surface without stirring it through.
